One of the arguments for adopting a raw vegan diet raw food is that they contain enzymes that can aid in human digestion. The idea is that if we use "live" food with enzymes intact, our bodies can actually use these enzymes in the digestion of food.
This reasoning has never sat well with me and here's why:
Enzymes are for the plant, not the person
Raw foods contain enzymes that are necessary for proper development of the plant. For example, a green banana contains enzymes that allow the fruit starch to convert to sugar, that is, to ripen.
Once complete, the enzymes are gone. So to actually use these enzymes would have to eat unripe, acidic, nutritionally underdeveloped.
Kind of defeats the point of eating nutritionally packed with raw food, eh?
And even if you are made to eat fruit immature, there is no reason to believe that the enzymes in the plant would be capable of functioning in their digestive processes.
In summary, these enzymes are important for plant not for us. Our bodies have their own enzymes that allow us to properly digest the food we eat.
So why eat a diet Raw?
There are several reasons to eat a diet rich in raw foods, the main one is that raw foods are nutritional power. The food has not been damaged by heat or processing and retains its nutritional integrity.
And indeed, for enzymes!
As I mentioned, enzymes are necessary for plant growth. By leaving your food fully ripen before consumption, allowing the enzymes to work their magic, so much food tastier and easier to digest …
So what you know, plant enzymes aid in digestion OJ human after all: D
