Cheesecake in its present form is relatively "young" culinary invention, but cheesecake goes back centuries. With the natural sweetness of cheese infants, it was natural that would not take long before some smart cookie started playing with it in desserts.

All the way at the time Roman, first century AD, was a sweet cake often used as a temple offering called libum. To see if the ingredients sound a little familiar: cheese, flour, eggs and honey occasionally. Culinarily, that's not all that terribly far from what we know today, although libum was designed to be cooked and wrapped in leaves in a fire. These are several steps removed from a Viking oven with electronic temperature control.

When the Romans invaded most of Europe and parts of Asia, which brought their food with them, including libum. The genius is that libum recipe is made from ingredients that are available in almost every culture. It is also very simple, so even the most inexperienced or illiterate (as most were at the time) cook can run with a good chance of success. Another advantage of simplicity is that it is open to interpretation, and a look at the wide range of modern varieties of cheese that has happened will tell you big.

Many people and restaurants, as with any food discovery dates back to early 20th century, demand cheesecake in New York. The most popular candidate, however, is Arnold Reuben, who owned the now legendary Turf Restaurant in New York. He said the cheesecake from New York was a family recipe, and his claim deserves legitimacy if only for the number of people were introduced to the wonders of its simple flavors in the restaurant.

Whenever the cheesecake recipe from New York came from, and whatever the person or family we have to thank for it, has become a landmark on our culinary landscape and one of the cornerstones of what we call kitchen.
